The UHDS-402A does support 1440p and it will operate with 1440p 60hz/120hz/144hz. However, it doesn't support downscale from 1440p to 1080p so both outputs will receive 1080p@ 60hz at the same time
No, in order to extract the sound, your soundbar should have an HDMI input port.
If your soundbar doesnt have an HDMI input port then this product will not work for your requirements & it won't be able to extract the sound

Yes, the UHDS-402A does support Dolby Atmos pass-through via HDMI output. However, the optical audio output will only support up to 5.1ch
The Beam doesn't have an HDMI input port, it has HDMI ARC port which needs to communicate directly with TV's HDMI ARC port. The UHDS-402A doesn't support HDMI ARC output. You can connect the optical audio cable to your Sonos beam with UHDS-402A.
The UHD-402 supports HDMI ARC connection between the Output B display and the HDMI input 4. If you'd like to connect your Sonos beam via HDMI ARC connection then you'll need to use the UHD-402 instead.
If your projector doesn't have an ARC HDMI port then you'll need to use a HDMI switch with audio extraction via optical output to connect it to your Beam. UHDS-401A and UHDS-402A both support optical output audio extraction.

Yes, the UHDS-402A does support 4K@60hz 4:4:4 output through both output A and B. It also supports 4K to 1080p downscale function which can be enabled if either of the outputs are only 1080p so that you can retain 4K to the other output
